Here is the easiest way to make a lemon flavored liqueur.
1 cup lemon juice
zest of one lemon making sure not to get the pith
1 cup sugar
1 cup or more cretan tsikoudia or pure alcohol or 100-proof vodka
Add the sugar, lemon juice and lemon zest to a jar and stir well until the sugar dissolves.
Leave the mixture for 12 hours.
Strain out the lemon zest and add the raki (or alcohol or vodka).
Stir again, transfer to a bottle and store in the refrigerator.
It’s a very refreshing and cooling drink.
My mum does exactly the same thing!She uses the lemon ice cubes while cooking and baking, she makes lemonades or enhances drinks already made with that flavor.

(in btw. when we have excess lemon in the garden, we generally collect their juices into ice-trays to be used with various drinks later on as lemon cubes.)

James, my sister calls it “the lazy woman’s liqueur”. It is a sort of limoncello, less sweet and more refreshing than the italian liqueur. And yes, serve it straight from the fridge.
Btw, have you any idea how I can use 1 kilo of dried elderflowers?
Joumana, this is the easiest method to make lemoni liqueur, but of course there are other recipes which are complicated and time consuming.
